Ingredients:

  1. 2 medium sized onions, diced
  2. 4 mild chili peppers diced
  3. 2 pound mushrooms
  4. 2 pound chicken—cut into bite sized cubes
  5. 3 medium sized tomatoes
  6. 4 tablespoon olive oil
  7. 1 cup shredded mozzarella
  8. Curry powder
  9. Salt and pepper to taste
  10. Thyme/Parsley for Garnish purpose

Directions:

  1. Saute the onions in olive oil over the medium heat until it is translucent. Add the peppers and cook them until peppers begins to soften. Meanwhile, preheat your oven to400F.
  2. Add the chicken and cook for 5 minutes.
  3. Turn the heat up to high and add tomatoes and mushrooms. Cook until chicken and mushroom are fully cooked.
  4. Add the seasonings and fold.
  5. Transfer to a casserole dish.
  6. Sprinkle shredded mozzarella, bake at400Funtil cheese melted and turns brown.
  7. You can substitute parmesan instead o ruse half a cup of each. Parmesan is stronger than mozzarella.
