This recipe is based on my banana flaxseeds walnut bread, with some brief modification and addition of oatmeal.

Ingredients:

  • 2 ripe large organic banana
  • 3 medium organic egg
  • 1 cup organic brown sugar
  • 1 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup organic whole wheat flour
  • 1 tbsp all spice
  • 1 tbsp cinnamon powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/3 cup flaxseeds
  • 1/4 cup sesame seeds
  • 2 cup organic oatmeal
  • 1/2 cup chopped walnut
  • 1/2 cup cranberry
Preparations:
Blend brown sugar and oil together. And add egg one by one, each time until well blended.
Then blend banana in the mixture.
Add vanilla extract and mix well.
Mix all the dry ingredients except oatmeal, walnut, and cranberry.
Add dry mixture gradually and mix.
Stir in oatmeal and walnut in a clockwise manner until oatmeal is even distributed.
Divide the batter into two portion.
Add add cranberry into one portion, and stir briefly.
Preheat the oven at 365F.
Pour the batter into one large muffin baking tray and one small muffin baking tray.
Each portion batter is divided into 6-large muffin and 12-small muffin.
Bake for 20 mins or until toothpick comes out clean.
Cool the tray on a rack.
Divide the batter into two portions.

Note: These muffins are very delicious. Look at the baking tray. Four pieces are already gone even before completely cool down and pictures taken.
