This banana bread recipe is dairy free, butter free, and very moist. I replace the normal flour with organic multigrain flour. Also to make this bread even healthier, I reduce the sugar from 1 cup to a quarter cup of organic brown sugar, reduce the oil to 1/2 cup vegetable oil, instead I also add 1/2 cup plain soy milk. Compare the traditional banana bread, I add walnut, flax seed, black sesame seed for different flavor. I hope you enjoy this wonderful banana bread as I do.

Ingredients:

Wet mixture

  • 1/2 cup vegetable oil
  • 1/4 cup organic brown sugar
  • 3 medium organic eggs
  • 3 ripe medium banana
  • 1/2 cup soy milk
  • 2 tsp vanilla extract

Dry mixture

  • 1 cup Organic Multigrain Flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp all spice powder
  • 1 tsp cinnamon powder
  • 2 tbsp flax seeds
  • 2 tsp freshly grounded black sesame seeds powder
  • 1 cup chopped walnuts

Preparations:

  1. Beat oil with sugar first, then add egg and banana, beat well. Then add soy milk and vanilla extract, beat well, then set aside.
  2. Prepare all the dry ingredients together in a bowl, mix them well.
  3. Gradually add the dry mixture into wet mixture, and medium speed mix until all blend together well.
  4. Spray the baking pan. Add the batter into the pan.
  5. Set the stove at 350F, baking for 30minture, or until the toothpick comes out clean.

Note: This is the first time for the modified recipe. I really enjoyed it. No too sweet, but moist, with rich nut flavor. Love it.
