Organic Banana Walnut Bread
This banana bread recipe is dairy free, butter free, and very moist. I replace the normal flour with organic multigrain flour. Also to make this bread even healthier, I reduce the sugar from 1 cup to a quarter cup of organic brown sugar, reduce the oil to 1/2 cup vegetable oil, instead I also add 1/2 cup plain soy milk. Compare the traditional banana bread, I add walnut, flax seed, black sesame seed for different flavor. I hope you enjoy this wonderful banana bread as I do.
Ingredients:
Wet mixture
- 1/2 cup vegetable oil
- 1/4 cup organic brown sugar
- 3 medium organic eggs
- 3 ripe medium banana
- 1/2 cup soy milk
- 2 tsp vanilla extract
Dry mixture
- 1 cup Organic Multigrain Flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp all spice powder
- 1 tsp cinnamon powder
- 2 tbsp flax seeds
- 2 tsp freshly grounded black sesame seeds powder
- 1 cup chopped walnuts
Preparations:
- Beat oil with sugar first, then add egg and banana, beat well. Then add soy milk and vanilla extract, beat well, then set aside.
- Prepare all the dry ingredients together in a bowl, mix them well.
- Gradually add the dry mixture into wet mixture, and medium speed mix until all blend together well.
- Spray the baking pan. Add the batter into the pan.
- Set the stove at 350F, baking for 30minture, or until the toothpick comes out clean.
Note: This is the first time for the modified recipe. I really enjoyed it. No too sweet, but moist, with rich nut flavor. Love it.
