This simple appetizer relies on good-quality ingredients — excellent baguette for toasting, olive oil for drizzling, and creamy camembert to top it all off.

 Ingredients

  1. 1 good baguette
  2. Olive oil
  3. Salt
  4. Pepper
  5. 8 ounce(s) good-quality camembert or other creamy cow’s milk cheese
  6. 1 cup(s) fig preserves or macerated fruit such as huckleberries
  7. Sea salt

Directions

  1. Preheat oven to 425 degrees F.
  2. Brush olive oil onto a baking sheet. Cut baguette into 1/4-inch-thick slices, and arrange on baking sheet. Drizzle olive oil onto baguette, and season with a little salt and pepper. Bake for 3 to 4 minutes to toast the bread.
  3. Remove baguette toasts from the oven, and top each with a 1/4-inch-thick slice of cheese. Bake an additional 2 to 3 minutes, or until cheese is melted.
  4. Remove from oven, and spoon a small slice of preserved fig, or about 1 teaspoon fruit, onto each crostini. Finish with a small pinch of sea salt.
