This is a simple biscotti. It is easy, quick. I use the whole wheat flour instead of all-purpose flour.

Ingredients:

  • 1/2 cup vegetable oil
  • 1 cup organic sugar
  • 3 cup whole wheat flour
  • 3 medium organic eggs
  • 1tbsp baking powder
  • 1 tbsp anise extract

Preparations:

In a medium bowl, mix vegetable oil, sugar first until smooth, then add egg one by one until well blended each time. then add anise extract.

Mix whole wheat flour and  baking powder, stir the dry mixture into egg mixture and form a heavy sticky dough.

Divide dough into two portions. Form each portion into a roll along the baking sheet, press the roll into a 15-cm long and 1-cm thick.

Preheat the oven at F375. Bake for 25 mins, remove the baking sheet from the oven, cool a little bit down, cut the dough into 1 cm thick slices. Turn the cutting site up, and bake for another 8 mins or lightly brownish.

Cool the sheet on the wire rack.

Great with coffee.
