Ingredients:

  1. 2 medium eggplants (peeled and cube)
  2. 1/2 cup diced red and green pepper
  3. 2 teaspoon garlic paste (fresh finely chopped)
  4. 4 tablespoon soy sauce
  5. 2 teaspoon ginger paste (finely chopped)
  6. 2 tablespoon olive oil
  7. 2 tablespoon finely chopped cilantro

Directions:

1. Add salt onto eggplant cubes and rest for 30mins to drain the water out, to soften the eggplant and reduce the oil usage. 2. Add oil into the medium heated pan, add eggplant and stir until it soft and lightly brownish. 3. Remove the eggplant from the pan. 4. Add garlic paste and red, green pepper, cook for 2 mintute. 5. Add soy sauce and ginger. Finally sprinkle cilantro for garnish.
