Shrimp Egg and Stir Fried Brown/Basmati Rice
Stir fried rice is one of my favorite dish. It can be either main entrée or side dish. When I cook fried rice, I always add more vegetables providing more nutrients and fibers. This recipe is a high proteins, fiber and much nutrients, low fat dish.
Ingredients:
- 1 cup brown rice
- 1 cup basmati rice
- 1 cup water
- 3 cup frozen mixed vegetables ( corn, chopped carrots, chopped green beans, fresh lima beans, and peas)
- 1/4 pound pre-cooked shrimp, chopped
- 2 organic eggs
- 1/2 cup finely chopped onion
- 2 tablespoon olive oil
- Salt and fresh grounded pepper for seasoning and taste
Directions:
- Mix brown rice, basmati rice and water together, cook for 30mins. Let it cool.
- Set the skillet pan on the medium heat stove. Add olive oil and mixed vegetable, stir until it is fully thawn.
- Add the shrimp and stir for one minute.
- Mix the rice into the shrimp and vegetables, add pepper and salt.
- Gradually add the scrambled egg, stir the rice mixture thoroughly for another 1 minute.
- Serve when it is warm, not hot.
