Ingredient:

  1. 2 cups Cooked overnight rice ( brown rice, balsamic rice and white rice)
  2. 2 cup mix vegetable ( finely chopped carrots, corn, snow pea, and chopped green beans)
  3. 3 eggs
  4. 2 tablespoon olive oil
  5. 1 teaspoon black pepper
  6. 1 teaspoon salt
  7. 1/2 teaspoon soy sauce
  8. 2 tablespoon finely chopped green onion
  9. 2 tablespoon tomato paste (Optional)

 

Directions:

  1. Heat the pan at high, add olive oil and scrambled egg. Stir and mix well until the egg mixture turn into solid. Remove the egg and set aside.
  2. Add mixed vegetable and stir, set the heat to medium, cook for 5 miutes.
  3. Add the rice and stir constantly, until vegetables are well cooked.
  4. Add pre-cooked egg, soy sauce, black pepper, sale and green onion, turn the heat to high, cook for one more minute. ( tomato paste optional).
  5. Serve.
