Ingredients:

1 package of frozen tortilla’s

Sesame or black seeds to sprinkle on the top

Filling: 1 onion 1 pound spinach 1 tablespoon oil 2 OZ crumbled feta cheese 4 mid-size potatoed Cooked meat pieces Salt Ground black pepper Liquid Sauce: 3 eggs 1 cup vegetable oil 1 cup milk

Directions: 1. The day before cooking, put frozen tortillas in the fridge for defrosting overnight or defrost them in the microwave if you didn’t have time to do it otherwise. 2. Prepare the filling as you like. Feta cheese, parsley, meat and potato can be used for this borek. I usually use feta cheese and spinach for this filling. However, my husband like mashed potatoes and meat version. Therefore I develop the two filling recipes. 3. For spinach filling: saute’ onion with olive oil until the onion is tender and soft. Then stir in spinach and until it is dry. Season with salt and pepper. Put aside to cool and add crumbled feta cheese. 4. For meat and potato filling: Boil and mash the potato, add salt and pepper. Add fried onions, tomato paste and parsley. And then add the meat cubes for better taste. 5. In a large bowl, mix in gradient of liquid sauce and whisk till the mixture is homogeneous. 6. Apply the liquid sauce over each tortilla using a kitchen brush. Put 2 tbsp of filling on one edge of the tortilla and roll it up. Place on a well-greased pan. 7. Spread the remaining liquid sauce over the rolled tortillas and sprinkle sesame or black seed. 8. Preheat over to 350F and bake until the tops get golden in color. 9. You may cut them into halves for serving. 10. If you like the borek to be more spicy you can use red chilli pepper in the filling.
