Kofte , vegan version, is a very healthy dish mainly with lentils, and fine bulgur.

Ingredients:

  1. 1 cup lentils
  2. 2 cup water for boiling lentils
  3. 2 cup fine bulgur
  4. 2 tbsp extra vergin olive oil
  5. 2 tbsp tomato paste
  6. 2 tbsp hot pepper paste
  7. 1 pinch sea salt
  8. 1 tbsp finely chopped cilantro
  9. 1 tbsp finely chopped green onion
  10. 1/2 medium purple onion ( fine slice)
  11. 2 tbsp sumac
  12. 1 medium Romania lettuce

Preparations:

  1. Boil the lentils with 2 cup of water until the lentils are almost melt down.
  2. Pour the lentils into bulgur and stir fully to make sure the bulgur completely soft. you can either use spoon or hands.
  3. Meanwhile add olive oil, tomato paste and hot pepper paste gradually for well mixing.
  4. Add sea salt little by little. Finally add green onion and cilantro. Mix them until cooperate.
  5. (Optional) Make small pieces of Kofte with hand as shown in the pictures. Mix sumac and purple onion slices, add kofte pieces onto the lettuce and onion slice, eat together.

Note: Kofete can be served as side dish or main dish for vegans.
