Lentil is a good source for protein, less carbohydrates., providing much fiber as well. Bulger, cracked whole wheat, providing much fiber than wheat flours. Lentil and bulgur combination is a good combination for protein and fiber.
Material:
1 cup red lentil
2 cup fine bulgur specially for kofte
3 cup water
½ medium finely chopped onion
4 tbsp tomato paste
3tbsp hot pepper paste
2 tbsp olive oil
4 branches green onion
5 branches cilantro
3 tsp salt

Preparations:
1 Boil red lentil until it is fully cooked and soft.
2 Saute the finely chopped onion till soft, brown and nice smell. Add tomato and hot pepper paste. Stir and mix well.
3 Pour the lentil soup into fine bulgur, mix well and let bulgur fully soaked in the soup. Meanwhile add sauteed onion, tomato and hot pepper paste. Mix well.
4 Add finely chopped cilantro and green onion, mix well.
5 Mix well with hands and adjust the texture with olive oil.
6 Shape the kofte and serve with red purple onion and lettuce.

Cut red onion into thin slices, mix them with sumac.
Rinse lettuce and dry with damp paper.
Put kofte on the lettuce leave with suma mixed red onion. Eat together.
