Steam food is much healthier than fried. In China, we have steam dumpling for breakfast all the time. It is one of my sweetest memories from my childhood. It was my job to buy steam dumpling from school kitchen when I was a kid. I started to buy breakfast for the family since I was 7-year old. My sister and brothers were in school for morning study from 6:00am to 7:30am. My father was a biology teacher in the high school, and my mother was a Chinese literature teacher. They had to work in the morning too. So I was the only free one. The best advantage for me is that I learn to make decision which type dumpling to buy to fit our budget. Back then our family was very tight since I have three brother and one sister in school, which is a big expense every year. I was in primary school back then.

Meat dumpling is more expensive than bun. Price varies among different filling dumplings. Therefore I will buy different filling dumpling and bun. This is a great opportunity for me to practice my mathematics. I have to calculate how many pieces each for meat, vegetable and bun.

I had a big stomach, therefore I ate more buns. My sister had small stomach, therefore she can have meat dumpling. Now you understand what I am talking about. My brothers and I often have bun since we eat far more than my parents and sister. However, my parents always save meat dumplings for us. But still we have too many children in the house. OK. Let me stop here for the family history.

The pork meat dumpling is the most common dumpling in China. I agree that it has a great smell when you combine pork and green onion together. And you can also add many different vegetables for variable tastes.

My husband doesn’t eat pork, therefore I have to come up some other fillings for steam dumpling. I created this wonderful beef dumpling. I assure you that this is my invention. I have never heard anybody mentioned this type of dumpling before even though in northern and northerwestern part of China where people tend to eat more beef and wheat flour-made food.

I used tumeric, ginger, yellow and red curry in the ground beef. The flavor is incredible amzaing. You will love it.

Ingredients:

  1. 1 pound Organic Ground Beef ( 10% fat)
  2. 3 Cup chopping Cilantro
  3. 1 teaspoon tumeric powder
  4. 1 teaspoon mixed curry powder
  5. 1/2 teaspoon black pepper powder
  6. 1/2 teaspoon sea salt
  7. 2 tablespoon low sodium natural brewed soy sauce
  8. 1 teaspoon cumin powder
  9. 1/2 teaspoon hot pepper dates powder
  10. 1 tablespoon freshly grounded ginger
  11. 1 teaspoon corn starch
  12. 1 teaspoon hot pepper flakes
  13. 1 tablespoon olive oil
  14. 1/2 Cup Orgfanic chicken broth

Mix all the ingredients, and stir in clock-wise, until the mixture is smooth and tight. The container side is clean.

Preparation of Dough

  1. 5 Cup whole wheat flour
  2. 2 teaspoon dry yeast
  3. 1 tablespoon Organice cane sugar
  4. 2 Cup Organic fat free milk
  5. 1 Cup luke warm water

Mix all the ingredients together, and knead briefly, and let it rise for 2 hours in the oven with the light on.

Knead the dough again and cut the dough into many small pieces. Then wrap the meat filling inside with thin small piece of dough.

Put them in the steamer and steam for 25 minutes.

Serve warm.
