Kinda feel tired after a whole day and crave for vegetable dishes. I cooked this three vegetable dishes and stirred rice with mixed fresh beans.

Cauliflower with Tomato Sauce

Ingredients:

  1. 1/2 head medium size cauliflower ( small pieces by hand)
  2. 2 tbsp tomato sauce with onion
  3. 1/4 medium white onion ( finely chopped)
  4. 1 tsp ground black pepper
  5. 1/2 tsp salt
  6. 1 tbsp grape seeds oil
  7. 1/4 cup organic chicken broth

Preparation:

Set stove at medium heat, add oil and onion, stir till onion become translucent. Add cauliflower, stir for one minute, add black, tomato sauce, and chicken broth. Cook for 4 minutes. Add salt, mix and serve.

Onion Eggplant ( cooked in Pressure Cooker)

Ingredients:

  1. 3 medium Philippine eggplants ( Cubes): soaked in salt water for 15mins.
  2. 1/2 medium white onion ( chopped)
  3. 3 Jalapeno pepper ( sliced)
  4. 1 tbsp grape seeds oil
  5. 2 tbsp low sodium soy sauce
  6. one pinch salt
  7. 1 tsp black pepper
  8. 1/2 cup organic chicken broth

Preparations:

  • Turn on the stove and set the medium heat. Add Jalapeno pepper and olive oil. Stir till you smell pepper’s hot. Add onion and eggplant and stir for one minute. Then add low sodium brewed soy sauce, salt and black pepper. Add chicken broth, Cover with lid and close the pressure valve, cook for 5 minute.
  • Serve warm on the rice dish ( see below)

Watermelon skin with snow pea

Ingredient

  1. 1 1/2 cup watermelon skin ( sliced)
  2. 1 1/2 cup snow pea
  3. 1 tbsp minced garlic
  4. 1 tsp ground black pepper
  5. one pinch salt
  6. 1 tbsp olive oil

Preparations:

Turn on the stove and set medium heat. Add olive oil and garlic, stir until garlic pieces turn into light brown. Add watermelon skin and snow pea, turn the heat to high, stir and  add salt and black pepper. Cook for another 2 mins.  Serve warm.

Garlic Watercress

Ingredient:

  1. 1 bunch watercress
  2. 1 tbsp minced garlic
  3. one pinch salt
  4. 1 tsp olive oil

Preparations:

Stir the watercress very briefly.

Stirred Rice with mixed fresh frozen beans

Ingredients:

  1. 1 package fresh frozen mixed beans
  2. 5 cup cooked basmati rice
  3. 4 egg  white with 2 yolk
  4. one pinch salt
  5. 1 tbsp ground black pepper
  6. 1/2 cup organic chicken broth
  7. 3 tbsp  grape seeds oil

Preparations:

Scramble egg white and yolk. heat the stove and pot very warm, add the egg mixture, stir until it is cooked. Remove the egg, add the fresh frozen beans, stir until it is soft, add the rice on top of the bean, then add the chicken broth. Reduce the heat and cover the pot with lid, simmer for another 6 minutes.  Then stir the rice and beans, until the liquid is almost gone, add salt and black pepper, and cooked egg. Continue mix the rice until the rice is moist, but not dry.  Serve warm.

Note: we have enough food and have them for next day lunch as well.
