Have two very ripe banana need to be finished. I also have some chocolate powder left from last winter. Therefore I made this chocolate banana muffin.

Ingredients:

  • 2 very ripe banana (medium size)
  • 1 cup vegetable oil
  • 3 organic eggs
  • 1 tsp vanilla extract
  • 1 1/2 cup multigrain flour
  • 1/2 cup old fashion oats
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 pack Starbucks Chocolate drink powder
  • 1/2 tsp sea salt

Preparation:

Mash the banana in a  bowl first until smooth. Add egg and oil together, whisk them together. Gradually add oil and egg mixture into banana, then blend in vanilla extract.

Mix flour, oats, baking powder/soda, salt and chocolate powder all the together first. Then add the dry ingredients into moisture mixture, blend with rubber spoon until well mixed.

Set the oven at 350F, Insert the cupcake paper cup into muffin baking pan, add the batter into paper cup. Bake for 30mins or until toothpick comes out of the bread nice clean.
