Eating healthy is a key to have a health life. Vegetable plays important role in healthy eating diet. However, most people don’t have enough vegetable in their daily food. Salad is the most convenient way to have vegetable. But for some people like me, my stomach doesn’t  like cold and raw vegetables. Therefore I came up this super delicious vegetable soup. I hope you will like it as much as I do.

Ingredients:

  • 1 medium white onion ( finely chopped)
  • 2 medium Anaheim pepper
  • 1 1/2 cup mixed Purple, Gold and Pink potato ( chunks)
  • 2 medium ripe tomato ( finely chopped), juice collected too
  • 1 cup chopped carrot
  • 1 cup frozen okra
  • 1/2 cup frozen green pea
  • 1/2 cup fresh corn
  • 1 package Organic chicken broth ( 960ml)
  • 1/2 tsp black pepper
  • 1/2 tsp oregano
  • 1/2 tsp sea salt

Preparations:

Add 2 tbsp extra virgin olive oil, set the stove on medium. Add onion first until soft. Meanwhile add a little bit black pepper.

Add pepper and stir until the pepper become soft. Add potato chunks, carrot, mix very well until, and cook for 2 minutes.

Add chicken broth, bring to boil. Then add the rest okra, peas, corns, and tomato. Bring it to boil again, then add oregano and the rest black pepper.

Boil at medium high on the stove for 5 minutes, then reduce to low and simmer for about 20-30minutes.

Add sea salt, and turn off the stove.

Serve delicious soup warm or cold.

Note: You can add more black pepper or salt if you like. I prefer not to add salt. This soup gives a mild sweet taste from potato and corn. No need extra salt. If you like black pepper, you can add more before you eat.
