Ingredients:

  • 8 cups water
  • 1 tsp olive oil
  • 3 carrots, peeled and diced
  • 1 large onion, diced
  • 4 tsp minced fresh garlic
  • 1/2 cabbage, chopped
  • 1/2 lb frozen green beans
  • 2 tbsp tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1 large zucchini, diced

Preparations:

Add olive oil and saute the onion, carrot and garlic, and cook for about 5 minutes. Add all the remaining ingredients except zucchini, and water, bring to boil for 10 minutes or till carrot becomes soft. Then add zucchini and boil for another 5 minutes.
