This recipe use corn meal and whole wheat flour plus cranberry. It is really nice. Give it a try and let me know what you think.

Ingredients:

  1. 3/4 cup unsalted butter
  2. 3/4 cup -1 tbsp brown sugar
  3. 1 organic egg
  4. 1 1/2 cup + 1 tbsp whole wheat flour
  5. 1/2 cup + 1 tbsp corn meal
  6. 1 1/2 tsp baking soda
  7. 1/4 tsp sea salt
  8. 1 1/2 tsp vanilla extract
  9. 1/2 cup + 1 tbsp dry cranberry

Preparations:

  • 1. Blend butter, sugar together first, until it become creamy. Then add egg and mix it well. Finally add vanilla extract, blend well.
  • 2. Mix whole wheat flour, corn meal, baking soda, sea salt and cranberry together with a whisk.
  • 3. Gradually add dry mixture into butter mixture, using mixer to blend them well.
  • 4. Form the dough into a column, 3 cm in diameter.
  • 5. Let it cool in the fridge for 2 hours.
  • 6. Cut into half cenimeter in thickness, and put them on the baking sheet lined up with baking paper.
  • 7. Bake the cookies at 350F for 12 mins.
  • 8. Cool in the baking sheet for 5 minutes, then move to the wire rack for further cooling.

Note: My husband took some to work. This cranberry cookies were loved by his friends from work.
