Cranberry Corn Meal Cookies
This recipe use corn meal and whole wheat flour plus cranberry. It is really nice. Give it a try and let me know what you think.
Ingredients:
- 3/4 cup unsalted butter
- 3/4 cup -1 tbsp brown sugar
- 1 organic egg
- 1 1/2 cup + 1 tbsp whole wheat flour
- 1/2 cup + 1 tbsp corn meal
- 1 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1 1/2 tsp vanilla extract
- 1/2 cup + 1 tbsp dry cranberry
Preparations:
- 1. Blend butter, sugar together first, until it become creamy. Then add egg and mix it well. Finally add vanilla extract, blend well.
- 2. Mix whole wheat flour, corn meal, baking soda, sea salt and cranberry together with a whisk.
- 3. Gradually add dry mixture into butter mixture, using mixer to blend them well.
- 4. Form the dough into a column, 3 cm in diameter.
- 5. Let it cool in the fridge for 2 hours.
- 6. Cut into half cenimeter in thickness, and put them on the baking sheet lined up with baking paper.
- 7. Bake the cookies at 350F for 12 mins.
- 8. Cool in the baking sheet for 5 minutes, then move to the wire rack for further cooling.
Note: My husband took some to work. This cranberry cookies were loved by his friends from work.
