We have some rice left over from weekend. A quick fix dinner for Monday will be stir fried rice with heavy loaded vegetables. Therefore I only need fix one entree without side dishes and only need to wash one pan after dinner. Ok,let me get started.

Ingredients: ( 6 servings)

  1. 3 organic egg white ( scrambled)
  2. 2 medium carrot, finely chopped
  3. 1 small onion finely chopped
  4. 1 cup chopped green beans
  5. 1/2 cup sweet corn
  6. 1/2 cup chopped celery
  7. 3 cup spinach
  8. 1/2 cup organic chicken broth
  9. 2 cup cooked rice ( mixture of Barley, Millet, Brown rice, Wild rice, and Indian rice
  10. 2 table spoon extra virgin olive oil
  11. one pinch salt

 

Preparations:

  1. Heat the pot on the stove, add 1 table spoon olive oil into the pot, add the egg white when the oil is warmly heated. Briefly cook the egg white for one minute. Remove the egg white from the pot, set aside.
  2. Add the remaining one table spoon olive oil, add chopped onion, carrot, green beans, and celery, stir until soft. Then add corn, stir and mix well. To avoid burn, reduce the heat to medium.
  3. Then add organic chicken broth, let it boil for one minute. Add spinach and mix well.
  4. Add rice, salt and some black pepper. stir and cook for two more minutes.
  5. Done and serve.

Note: It is the only one dish for the dinner. Small amount of salt is used. Additional black pepper can be added  by individuals.
