Soup is good for your body. We, Chinese consider soup a key food for women to maintain health looking all year around, specially in Spring. While you eat soup, it provide nutrients in the soup, meanwhile you have enough water as well. Soup is also good for digestion, especially when you want to eat beans.

This mixed soup has dries fruit to supplement sugar used. Therefore this soup is no sugar added, high protein and high fiber, low carbon.

Ingredients:

Beans Mixture:

  1. 1/4 cup black beans
  2. 1/4 cup chickpea
  3. 1 tbsp small red bean
  4. 1/4 cup dark red kidney bean

Rice Mixture

  1. 1/2 cup black rice
  2. 1 tbsp black sesame seeds
  3. 1/4 cup millet
  4. 1/2 cup barley
  5. 1/4 cup Quinoa
  6. 1/4 cup stone cut corn meal

Dries fruit:

1/2 cup mixed currant, cranberry, raisin, and prunes.

Preparation:

Soak all the beans for 2 hours before cooking. The black beans is soaked separately because the water will be used for cooking too. The rest beans soaking water can be discarded.

Put all the ingredients into the large pressure cooker. Add 12 cup water plus the water soaking black beans. Turn on the heat at high, leave the pressure valve on, turn off the valve when you hear the steam is up. Then turn down the heat to medium and low. Cook for another 45mins. Turn off the stove. Let is cool on the stove slowly. Serve warm.
