Ingredients

  • 1 1/2 cups Whole wheat flour
  • 3/4 cup Flax seed meal
  • 1/2 cup Brown Sugar
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • One pinch sea salt
  • 2 Large Eggs
  • 1/3 cup Vegetable Oil
  • 1 cup Medium Banana mashed
  • 1/2 cup Walnuts chopped
  • 1 table spoon brown sugar
  • 1 teaspoon Cinnamon
  • 1 teaspoon Vanilla extract
  • 1 table spoon flour

Preparation

Mix together flour, flax seed sugar, baking powder, baking soda, cinnamon and salt in a bowl. In a separate bowl, beat together, vanilla extract, eggs and oil. Add dry ingredients and mashed banana alternating to egg and oil mixture. Stir until dry ingredients are moistened.

Pour into greased loaf pan or muffin tins.

Combine topping (walnuts, brown sugar and cinnamon) and sprinkle over batter. Pat down gently into batter.

Bake at350 Ffor 55-60 minutes.
