I love the cinnamon smell. I can eat it basically with anything. Extra bonus is that cinnamon does good things to my heart, which makes me love cinnamon even more. I love raisin and cranberry in my cereals, cookies and salad. This time I am going to put them into my bread also. As a result, it turns out fantastic.

Ingredients:

Dry ingredients: ( mix all the dry ingredients together first)

  1. 5 Cup whole wheat flour
  2. 1 cup unbleached all purpose flour
  3. 1 cup oat bran
  4. 2 tbsp cinnamon powder
  5. 1/3 cup raisins
  6. 1/3 cup currants
  7. 1/3 cup cranberries
  8. 2 tbsp white sesame seeds

Liquid ingredient:

  1. 1 1/2 organic non-fat milk
  2. 1/4 cup vegetable oil
  3. 2 tbsp brown sugar

Note 1: Heat the three ingredients together till boiling, then remove from the stove until it cools down. Then add 2 tsp dry yeast into the liquid, until some bubbles appear. Then add the liquid mixture into the mixed dry ingredients. You may need another 1 1/2 cup lukewarm water to make the dough. 

Knead the dough for at least 5-8 minutes until the dough is smooth and basin is clean. Let the dough sit for about 1 and half hour until the dough doubles size. Or you can punch the dough with your finger, and dough comes back immediately. 

Kneading the dough again and divide the dough into 3 loaves. Keep kneading for about 5-8 minutes. Shape the dough to fit the bread baking pan. Let the dough rest for another 30 minutes to 1 hour.

Turn on the oven and set temperature at400F, and bake the dough for 25 minutes.

Remove the bread from over and let it sit on the rack and cool.

Cut the bread into slices and enjoy.

Note: This is very healthy raisin, cranberry cinnamon bread. High fiber and low sugar. The longer you knead the dough, the better texture it will be. However too long kneading is very tiring. But I still manually knead the dough even though I have Kitchen Aid Mixer. I enjoy doing it.
